It’s easy to make hummus out of whatever you like.
2 cups of whatever (like roasted cauliflower, avocado, fava beans, black beans, English peas. I haven’t tried things like tomatoes, but I’m sure it would make some sort of delicious spread.)
2 cups of (veggies, beans, or whatever you like)
1/4 cup tahini
5 cloves of garlic
Juice of 1 juicy lemon
2 or 3 tbs olive oil
Salt to taste
Throw it all in a food processor or blender and blend until smooth. That’s it!
Some veggies would need to be cooked ahead of time (for instance, if you wanted to use kale or cauliflower or beans of course), but some can be used raw like avocado!
A combination of a few different veggies can be SO good, like bell pepper and black beans or avocado and kale. Fava bean hummus is a real treat if you can find fresh favas.
You can also adjust the ratio of other ingredients to taste. I like to add more tahini and lemon and sometimes a little red pepper flakes.
