Seltzer Biscuits

Seltzer Biscuits


  • 1 1/2 cups Super Bloom All Purpose flour

  • 1 stick butter (frozen)

  • 1 tablespoon baking powder

  • 3/4 cup seltzer (or any sparkling water)

  • 1/4 cup milk

  • salt



  1. Heat oven to 425

  2. Mix flour, baking powder and salt in a bowl

  3. Using a cheese grater, shred the frozen butter into the dry ingredients

  4. Mix gently then add seltzer and milk and mix until just combined. Don’t overmix! Dough should be sticky and a little loose

  5. Using a large spoon (or ice cream scooper!) scoop up about a 3/4 cup of the dough and then drop it onto a lined sheet pan. This is your biscuit! Continue dropping the dough onto your sheet pan, the recipe should make about 6 biscuits.

  6. Bake 15-20 minutes until golden brown, cool slightly and serve warm
