A couple of years ago, I was working the Brentwood farmers market. We were always pretty busy there, but this one day I sold out early and all our other markets were doing really well so I was feeling indulgent. Often if we sold out early I would stroll through the market and shop the stands all the way at the opposite end, where it was too far for a quick trip and I didn’t want to leave my stand while I still had bread to sell. I bought probably one of the most expensive things I could find: a 6oz jar of Pistachio nut butter, and an organic strawberry jam to go with. I hustled back to my stand to eat the rest of my sampling bread with my new treats. Then I did a whole photoshoot with the bread, nut butter and jam. It was GORGEOUS.
Anyway, I will never forget that special treat and how fancy it made me feel. This year, maybe we can focus on feeling fancy everyday! So, here is a Pistachio Nut Butter recipe that you can make for like $5 and you don’t need a food processor to make it, any everyday blender works perfectly!
1 ½ cups raw shelled pistachios
½ cup mild flavored olive oil
a pinch of salt
Put the pistachios in your blender with 2 tbs of olive oil and start the blender on its lowest setting. The nuts will bounce around in the caraf, so watch out! Using the smaller opening on top of the blender, gently pour a thin stream of oil while slowly increasing the blender speed. If it gets stuck, just turn off the blender and dislodge the mixture and then keep blending until smooth! Store at room temp. This would be amazing on a slice of Brioche, just sayin!
