Rainbow Sandwich

All the little details really made this delicious gluten-free, vegan sandwich come together: dressing the veggies, house pickled red onions, salting the avocado, peppering the tomato, and adding a simple vinaigrette to boost the flavor.

In the late 2000s, I worked at this funky lesbian owned punk cafe called Mama Buzz in Oakland California. Mama Buzz had great coffee and an interesting selection of cafe foods that seemed to make a bigger menu than a microwave and a panini grill should. But, we begrudgingly did it anyway. Grilled cheese, microwaved scrambled eggs (don't knock it ‘till you try it), facon BLTs, and a vegan sandwich that blew my mind. It was called Mama Buzz’s Ultimate Vegan, and it was every veggie in the house with hummus, vegan mayo and facon for an extra charge. All the little details really made this sandwich come together: dressing the veggies, house pickled red onions, salting the avocado, peppering the tomato, and adding a simple vinaigrette to boost the flavor. Here i’ve recreated this sandwich and made sure it includes the rainbow, because not only are we queer but there is a chain of queer women behind this recipe. Even the coffee at Mama Buzz was roasted by queer women who were at the forefront of the 3rd wave coffee movement (Equator Coffee.) This would be great on our new Sweet Loaf, which is perfect for sandwiches. - Lizzy

 

INGREDIENTS 

  • 2 slices Super Bloom Bakery Sandwich loaf
  • Hummus
  • Little gem leaves (or romaine)
  • Red onions
  • Shredded purple cabbage
  • Yellow and orange bell peppers
  • Tomato slices
  • Cucumber slices
  • Shredded or sliced carrots
  • Sliced radishes
  • Microgreens/sprouts
  • Sliced Avocado
  • Vegan mayo 
  • Vegan cheese slices *optional*
  • Simple vinaigrette

SERVING SIZE 

1 sandwich

EQUIPMENT 

Knife and cutting board

METHOD

  1. Toast up two slices of Super Bloom Bakery Sweet loaf
  2. Lay down your bottom slice to begin assembly
  3. First spread a generous amount of hummus on the bottom slice, then top with lettuce leaves and a slice of tomato and salt and pepper it
  4. Next stack your vegan cheese slices on top of the tomato
  5. On top of the cheese, stack sliced cucumbers, carrots, radishes and onions
  6. Next, add shredded cabbage & bell peppers and then dress the veggies with a simple vinaigrette
  7. Top the dressed veggies with avocado slices and salt the avocado
  8. Add sprouts on top of that
  9. Spread vegan mayo on the top slice of bread and add the slice to your sandwich!
  10. I’d recommend wrapping the sandwich in parchment paper and then cutting it in half to serve
