Super Toum

What is Toum?

Toum is a Lebanese spread made by blending raw garlic with oil and lemon. It makes a great vegan mayo and adds a creamy and garlicky flavor to just about anything. You can use it as mayo, add it to salad dressing, toss roasted veggies in it and more! Here we made a reimagined garlic bread with herbed toum and garlic flowers.

 

Ingredients

  • 1 cup of a neutral oil (we use safflower)

  • 1/2 cup garlic cloves (Bonus: Raw garlic boosts immunity)

  • A fist full of fresh herbs like: rosemary, parsley and basil (optional)

  • Juice from 1 lemon (2 TBS)

  • 1/4 tsp salt

 

Method

  1. Add garlic cloves, lemon juice, herbs, salt and 1/4 cup of the oil to a blender and blend to combine. It doesn’t have to be totally smooth, just chopped up.

  2. Once everything is blended turn the blender on medium speed and SLOWLY pour the rest of the oil in while the blender is going. The mixture will get thick and creamy.

  3. Use it right away or store it in the fridge for up to a week. It will become less pungent after 24 hours but its sublime when its fresh.
